Substance C6H5COOK (Kali benzoat)
Kali benzoat là chất rắn hút ẩm màu trắng, hòa tan trong etanol, hơi tan trong metanol và không hòa tan trong ether. Nó là một hợp chất có tác dụng ức chế sự phát triển của nấm mốc, nấm men và một số vi khuẩn được sử dụng rộng rãi làm chất bảo quản thực phẩm. Nó được liên hợp với glycine trong gan và bài tiết dưới dạng axit hippuric. Kali benzoat hoạt động tốt nhất trong các sản phẩm có độ pH thấp, dưới 4,5, nơi nó tồn tại dưới dạng axit benzoic. Thực phẩm và đồ uống có tính axit như nước trái cây (axit citric), đồ uống có ga (axit cacbonic), nước ngọt (axit photphoric) và dưa chua (giấm) có thể được bảo quản bằng kali benzoat. Nó được chấp thuận để sử dụng ở hầu hết các quốc gia bao gồm Canada, Hoa Kỳ và EU, nơi nó được chỉ định bởi số E212. Kali benzoat cũng được sử dụng trong còi trong nhiều loại pháo hoa.
