Axit l-glutamic là bột trắng kết tinh, một dạng hoạt động quang học của axit glutamic có cấu hình L. Cấu trúc phân tử của nó có thể viết đơn giản hóa là HOOC-CH(NH2)-(CH2)2-COOH, với hai nhóm carboxyl -COOH và một nhóm amino -NH2. Nó có vai trò như một chất dinh dưỡng, một vi chất dinh dưỡng, chất chuyển hóa của Escherichia coli, chất chuyển hóa của chuột và chất dẫn truyền thần kinh.
