a) Protein là những polipeptit cao phân tử có phân tử khối từ vài chục nghìn đến vài triệu.
Peptit là loại hợp chất chứa từ 2 đến 50 gốc α-amino axit liên kết với nhau bởi các liên kết peptit.
b) Protein đơn giản là loại protein mà khi thủy phân chỉ cho hỗn hợp các α-amino axit, thí dụ như anbumin của lòng trắng trứng, fibroin của tơ tằm,...
Protein phức tạp là loại protein được tạo thành từ protein đơn giản cộng với thành phần "phi protein" nữa, thí dụ như nucleoprotein chứa axit nucleic, lipoprotein chứa chất béo, ...
