Axit isoascorbic hoặc axit erythorbic là bột hoặc hạt tinh thể màu trắng, không mùi, là một trong những chất phụ gia thực phẩm phổ biến tại nhiều quốc gia, được ký hiệu là số E315. Nó là một đồng phân lập thể của axit ascorbic (vitamin C) và được tổng hợp bởi phản ứng giữa methyl 2-keto- d -gluconate và natri methoxide. Nó cũng có thể được tổng hợp từ saccarse hoặc bởi các chủng Penicillium đã được chọn cho tính năng này.
